Resipi Blueberry cheese tart


Syawal dah habis... Ramai yg mintak resipi Ramadhan hari tu lagi. Thus, i really apologizing for taking so much time for this. To make up for that, i have prepared the step-by-step recipe. ^_^ Baru tahu bukan senang sbenarnye sebelah tangan nk kacau adunan kuih.. sebelah tangan lg nk amik gambar, hoho...

Ceritera sikit tentang blueberry cheese tart yg sedap ni... Ever since my ummi started to make this cheese tart during my secondary school, it has been one of my family's favourite dessert. Everytime i make it, it never fail to make me drools over the oven. I like it best when it was just came out from the oven. The smooth, creamy cheese melt in the mouth blend with sweet and crisp tart crust and blueberry filling was so marvellous! Nyam... nyam... Waa.. I'm drooling right now!

Original recipe diambil dari buku resipi 'TARTS my heart' by Chef Kevin Chai.  Buku ni menyediakan segala macam jenis resipi tart... and i love all the recipes that i have tested. :)

TART CRUST RECIPE
Bahan2:

375g tepung gandum
22.5g susu tepung
90g gula kastor
250g butter
60g telur (dipukul)
3/4 sudu teh essen vanilla

Cara2nya (gambar lihat dr kiri ke kanan):
1. Campurkan tepung, susu tepung dan gula kastor dan gaul rata.
2. Masukkan butter. Rub in guna hujung jari sampai adunan resemble bread crumbs.


3. Masukkan telur yang dah dicampur dgn esen vanilla sedikit demi sedikit, sampai and form dough. Hati2 jgn tuang semua telur terus sebab kalau telur terlebih, dough akan jd lembik.
4. Wrapkan dough dgn plastic, sejukkan dalam peti ais lebih kurang setengah jam. (kadang2 sy skip step ni sebab nak cepat)
*Wokeh, siaapp utk tart crust!! Dough yg sama saya gunakan utk fruit tart dan egg tart.

5. Lenserkan bekas tart dengan marjerin/ butter. Sambil tu, preheat oven pd suhu 180'c.
*Dalam gambar ni sy gunakan bekas tart pakai buang. Senang, tak payah basuh.. =D
 6. Tekan dough dalam bekas tart dan trim kan sisi2x dia. Bakar dalam preheated oven pd suhu 180'c selama 15 minit sampai separuh masak.

*Nota kaki: Beza antara tart2... Cheese tart je perlu bakar separuh masak dulu sblum letak cheese filling. Fruit tart kene bakar terus sampai masak, egg tart pulak akan bakar selepas letak custard filling.

CHEESE FILLING RECIPE

250g cream cheese
80g gula kastor
3 biji kuning telur
50g whipping cream
1/2 sudu teh essen vanilla
2 sudu besar tepung jagung

Blueberry filling

Cara2 nya:
1. Pukul cream cheese dan gula kastor sampai lembut dan smooth. Masukkan kuning telur sebiji demi sebiji dan pukul sebati after each addition.
2. Masukkan remaining ingredients dan kacau rata.

Bila cheese filling dah siap, letak dua sudu kecil blueberry filling dlm half-baked tart crust. Jgn banyak sgt, nnt manis. Tapi, jgn kedekut sgt juga ;). Then letak cheese filling covering the blueberry.
 
Guna toothpick utk lukis pattern atas cheese. 
Utk lukis2 ni, amik cheese filling + blueberry filling + kaler purple skit. Sumer dlm small portion jeh. Pernah try guna blueberry je, tp bila lukis tak berapa nak melekat.
Bakar sekali lagi dalam oven pada suhu 180'c selama 10-15 minit.
Cheese tart yg dah siap, simpan dalam bekas kedap udara dan simpan dalam peti supaya tahan lebih lama. Selamat mencuba and Happy baking! ^_~/
